INGREDIENTS
- 250g Sardinian fregola (a type of durum wheat pasta similar to couscous)
- 250g ripe cherry tomatoes
- A nice bunch of basil
- 1 sprig of parsley
- 2-3 mint leaves
- 60g of roasted turkey slices (1.5% fat, packaged)
- 1 boiled potato
- Juice of half a lemon (or more, to taste)
- 1/4 of a Tropea onion
INSTRUCTIONS
- Boil the fregola for 10-15 minutes (it should remain al dente) and let it cool.
- In the meantime, chop the basil, adding a little garlic if you like, and chop the roasted turkey slices.
- Dice the boiled potatoes, and also chop the tomatoes and onion.
- Combine everything in a bowl, mix well, and add a bit of pasta cooking water.
It can be served at room temperature or cold.
P.S.: You can prepare this salad with other types of short or long pasta or even rice in the same way.
