INGREDIENTS
- Basil a good amount
- 2 cloves of garlic
- Pesto sauce
- 2 white eggs
- Chili pepper
Cooking time 20 minutes
INSTRUCTIONS
- We boil 2 eggs and in the meantime we wash the basil and clean the cloves of garlic.
- We put everything in the mixer and lastly we put the boiled white eggs.
- (Consider that the white eggs must be cold when you put them in the mixer).
- Let’s mince everything at the end we put all in a jar adding some salt and chili peppers.
- When we season the pasta, we could use as “oil rich”some spoonful of cold milk or simply pasta boiling water to amalgamate.
Variation #1
The enriched variation considers beyond the over mentioned ingredients some slices of boiled potato, some zucchini peels (both boiled in few water in the microwave), then thin minced and some breadcrumbs toasted on a pan. To be tasted!
Variation #2
It uses beyond the basil ,even a little bit of parsley. We mince all and in place of garlic we add a fresh baby onion or 2 even better. But we can put anyway an entire clove of garlic to season….tasty as well!
Variation #3
It considers the use both of the basil (80%) and parsley and 1 small clove of garlic , some light feta (greek cheese 0,1%) pressed previously with a fork and then put in the mix together with garlic, basil ,parsley. We spill everything with some spoonful of milk or by MCT oil. When feta is used, do not add salt because feta itself is already very very salty and tasty
