INGREDIENTS
- 1 chicken breast, sliced thinly
- 1 grapefruit
- 1 orange
- Half a lemon
- 1 sachet of saffron
- Half a glass of 0.1% milk
- A little white wine
- A small piece of ginger
- 2 white onions
- 1 tablespoon of flour
- A few parsley leaves (optional)
Preparation time: About 45 minutes
INSTRUCTIONS
- Thinly slice the onion and ginger and sauté them in a pan with white wine (and optional MCT oil). They should cook and “brown.”
- Also cook the chicken slices in a non-stick pan with some white wine and MCT oil (optional) until golden brown.
- Once cooked, add the chicken to the onions and add the juice of the grapefruit, orange, and half the lemon. Stir and let it reduce.
- Dissolve a tablespoon of flour in half a glass of milk, add the saffron, and pour it over the chicken. Let it cook for a few more minutes, and it’s ready.
- Finely chop the parsley and sprinkle over the chicken (optional).
This dish pairs wonderfully with plain rice, which can be cooked separately with water and a small piece of lemon peel.
