INGREDIENTS

  • 6 ripe tomatoes
  • 6 red onions
  • 2 carrots
  • 1 little eggplant
  • 100g of packaged ham 2% fat or packaged chicken or roasted turkey
  • 2 glasses of white wine

Time required 3 and a half hours

INSTRUCTIONS

  • Dice all the vegetables, add the diced ham and cook at temperature of 180° (I used greaseproof paper laid on the baking tray) for 15/20 minutes.
  • Leave for 15-20 minutes, then bring the temperature to 130° and moisten with the white wine.
  • Let it cook with low flame stirring sometimes.

This sauce is perfect to season pasta, cous cous or for canapè.
