INGREDIENTS

  • 25 g Corn flakes crumbs
  • 3 boiled potatoes
  • 2 onions
  • 1 eggplant
  • oregan
  • 2/3 ripe tomatoes or peeled tomatoes
  • 300 g ground lean veal or chicken

Cooking time 1 hour

INSTRUCTIONS

  • Mix the boiled pressed potatoes with the ground veal or chicken , do not forget to combine the cornflakes crumbs with a clove of garlic and a little bit of parsley too….
  • Shape 2 meatballs and coat them with corn flakes crumbs.
  • Pre-heat the same well known non-stick pan until hot and then put the meatballs in it.
  • flip them upside down as they get golden -brown. A little bit patience is required but they will get roasted as we would have used oil in the pan

Now let’s prepare the sauce for our meatballs :

  • Cook 2 onions and a chopped eggplant with white wine and some lemon juice.
  • Add tomato,oregan and combine to the meatballs and let them cook for 10 more minutes, then in the mixer onions and the eggplant will become a sort of cream.

P.S.: For the second meatball I prepared a sauce with peppers, tomatoes, garlic, onions, some basilicum and oregano, cooking all the ingredients together, then I put everything in the mixer.
