INGREDIENTS
- 600 g of small potatoes
- 400 g flour
- 5 egg whites
- 2 leeks
- 3- 4 spoons of tomato sauce
- 100 g of bresaola
With these ingredients we made 50 tortellis.
Cooking time: 2 hours
INSTRUCTIONS
- We put potatoes in the microwave for 20 – 25 minutes (I repeat :smaller potatoes faster cooking)
- Put in the kneader 5 egg whites and the flour and start kneading.
- Mince the bresaola in the mixer and the put it in a non stick pan
- Now take 2 leeks (earlier cooked in a microwave then in a pan with the tomato sauce) andcombine them with bresaola.
- Mix the the boiled potatoes to the bresaola and tomato and take from the kneader the mixture ( flour and and egg whites ).
- Cut the paste in small pieces and put in the “machine” until it gets the right thickness.
- Now put on the paste stripe small quantities of the mixture with the help of a spoon, and close it pushing with fingers, cutting it with a cog.
- For cooking put salty water in a pot and when it’s boiling put 20 tortellis,when they emerge, boil them for other 3 minutes and they are ready!
- Drip the tortellis with a small colander and then season them rigorously with a fat free food meat sauce!
- To make the potatoes seasoning inside the tortellis, cook 7-9 minutes in the microwave 2 leeks.
- When they are ready put them in a non stick pan with 3 spoons of tomato sauce and season them for 5 minutes.
- Then put together the bresaola (earlier cooked) , mix and add to the potatoes.
P.S.: It’s a dish that requires time, but it worthwhile.
50 tortellis can be the right quantity for 4-5 people , if they planned to eat other dishes during the meal otherwise if you want to eat just that, you double or triple the dose.
